These raspberry bars were absolutely delicious! I switched 1/2 cup white flour for whole wheat flour and added about 1/3 cup unsweetened coconut to the base as I was trying to replicate bars from my favorite bakery. I don’t have the ratios quite right but even so, the recipe is delicious and will be my summer repeat dessert! Best of all, I feel I can combine raspberries with whatever other berries or stone fruits I happen to have on hand.

I haven’t tested these with coconut oil or ghee but I think it may work! Same goes for the protein powder. Let me know if you give them a try!

Soooo awesome! Can’t wait to try it! Question, can I use coconut oil instead, or even ghee? I’m lactose intolerant and prefer not to use the vegan butter….Also do you think adding some protein powder in lieu of some of the oat flour might work, to give the bars a bit of a protein bump? I love these bars with gluten free oats and vegan butter. I do bake the base oatmeal layer for ten minutes at 350 degrees before assembling other layers and I bake it all for the full 30 minutes.
