We made this recipe exactly as written and it tasted AWESOME! We wouldn’t change a thing. This was the perfect high protein breakfast prep for us! The puff pastry crust was amazing and a new favorite moving forward (light and flaky). Thank you for sharing! Your cookbook is appreciated too. 😀

I used this recipe as a jumping off point for my quiche. In effort to clean out my fridge or the veggies I had on hand I made mine with 1/3 cup onion, 1/3 cup zucchini, 1/3 cup red bell pepper, 1/3 cup yellow bell pepper and then mozzarella instead of feta and cheddar. Sprinkled in some Italian seasoning as well but everything else I followed and after baking for 40 minutes this came out perfectly! Will be making it again.
